Easy School-Day Breakfast Ideas

Scrambled Burrito: Roll scrambled eggs, shredded cheese and a little salsa in a warm tortilla. Serve with a glass of fresh juice.

Mini Pizzas: Spread marinara sauce onto toast and top with soft scrambled eggs, shredded cheese and pepperoni. Broil in oven until the cheese melts.

Egg Muffins: Stir whisked eggs with cooked sausages, red bell pepper, shredded carrots and spinach. Pour into greased muffin cups and bake in preheated oven at 190⁰C until the eggs are set in the middle.

Dressed-Up Yogurt: Mix your kids’ favorite jam flavor, a spoon of honey and roughly-chopped toasted almonds with yogurt. Pairing strawberry jam with pistachios is another colorful option.

Greek Omelet in Pita: Cook whisked eggs with sautéed onions and bell peppers, then top with feta cheese. Spread hummus inside a pita loaf and then fill with the omelet.

Banana & Peanut Butter Milkshake: Combine milk, honey or sugar, peanut butter, ripe or frozen bananas, and a little bit of cinnamon in a blender and blend until smooth. 

Roast Beef & Egg Panini: Spread scrambled eggs along the bottom half of the sandwich bread, then top with roast beef slices and cheese. Heat in a sandwich press until the cheese melts.
